This is one of my all-time favorite sauces for pasta and wraps.
My version uses sunflower seeds.
Beets are rich in folate, manganese, potassium and Vitamin C. Consuming beets regularly can help with blood pressure, is great for athletic performance, can help fight inflammation, and even supports brain health.

On to the recipe.
Simple Beet Pesto Sauce
1 cup sunflower seeds, shelled
Juice of 1/2 lemon
3 tablespoons extra virgin olive oil
3 steamed or roasted beets (skin removed)
1/4 cup parmesan cheese
2 garlic cloves
2-4 tablespoons filtered water or preserved pasta water (if you make for pasta) if needed to thin out the sauce
Salt and pepper to taste
Add all ingredients to a blender or food processor and blend until smooth. Add water if needed, one tablespoon at a time.
Psst... I sometimes add some extra parmesan!
Taste with salt and pepper.
Pour over your favorite healthy pasta, add to a wrap, quesadilla, or veggie dip. I like a hearty lentil or chickpea pasta.
I usually add a few greens to my hot pasta and let it wilt from the pasta heat.
