I love that this is so nutrient-dense! It's low in sugar and high in protein, fiber, and antioxidants.
I make this for a dessert or breakfast.
Strawberry Almond Crunch Baked Air Fryer Oatmeal
Ingredients:
1/2 cup rolled oats
1 scoop vanilla protein powder
1 teaspoon chia seeds
1/4 cup unsweetened almond milk
1/4 cup plain Greek yogurt
1/2 teaspoon pure vanilla extract
1/4 teaspoon cinnamon
Pinch of salt
1/4 cup sliced strawberries
Crunchy Topping
1 tablespoon chopped almonds
1 teaspoon rolled oats
1/2 teaspoon pure maple syrup
1 teaspoon gluten-free flour
Instructions:
Preheat your air fryer to 360 degrees. Grease a small ramekin or oven-safe dish.
In a bowl, combine the rolled oats, protein powder, chia seeds, almond milk, Greek yogurt, vanilla extract, cinnamon, and salt. Fold in the sliced strawberries.
In a separate small bowl, mix the chopped almonds, oats, maple syrup and gluten-free flour.
Pour the oatmeal mixture into the prepared medium ramekin or similar dish.
Sprinkle the crunchy topping evenly over the top.
Bake for 8-10 minutes in the air fryer, or until the oatmeal is set and the topping is golden brown.
Enjoy! Let cool slightly before serving. Add some more Greek yogurt and fresh strawberries on top.
