BLT Pita Mashup - Bacon, Lettuce and Tomato at its BEST

What is a mashup?

I recently watched an Instagram video where a sandwich was made by cutting all the ingredients into small bits on a cutting board. You throw all the sandwich's inner ingredients onto the cutting board and start cutting with a large knife. A mash-up! It looked delicious and was a great way to combine all the flavor layers.

This inspired me and got me thinking…


I had just bought some bacon. I saw some cherry tomatoes on my counter. Lightbulb moment! 💡 Let’s do this mash-up idea with a BLT, but throw it in a pita!


I have been buying thin pita bread made with flax, bran, and whole grains. They hold up well and taste amazing. If you’re trying to eat healthier, look for pita bread that contains whole grains and nutritious extras such as flax.

This BLT mash-up contains sharp cheddar cheese for us cheese lovers. I also use dark leafy greens to add nutrient density to the recipe. Ok, so you love the crunch of iceberg or romaine lettuce? Then add both! You can have the crunchy lettuce AND dark leafy greens in one pita. GO FOR IT!

Blt pita mashup with bacon, tomato, cheese, greens on healthy pita bread


BLT Pita Mash-Up


Serves 4


Ingredients

4 pitas
1 cup cherry tomatoes, chopped
8 slices of crispy cooked bacon, chopped
1/2 cup cheddar cheese, cubed
1/4 cup green onions, finely sliced
2 cups dark leafy greens (like spinach or kale), roughly chopped
1/3 cup mayonnaise (consider an avocado-based one for a healthier twist!)
Fresh dill, optional (truly enhances the flavor of the blt)
Salt and pepper to taste


Instructions

In a large mixing bowl, combine the chopped tomatoes, crispy bacon, green onions, cheese, and dark leafy greens. Add in the mayonnaise, and gently toss everything together. Season with salt and pepper to taste. Add fresh dill and gently stir in.

Warm the pitas slightly. Don’t overwarm them or they may break apart. I used the microwave in 8 to 10-second increments. You want the pita to be pliable.

Carefully open each warmed pita and evenly distribute the filling among them.
Serve immediately and ENJOY!


** Recipe note - some people in my house overstuff their pita, then there is nothing left for me, so consider making a little extra if you have that person in your house too.**
