Kate Middleton’s Watermelon Salad:
3 cups watermelon, seedless and cubed
1 cucumber, chopped
1 avocado, chopped
1/2 cup feta cheese or goat cheese, crumbled
1 bunch mint, chopped
1/4 cup olive oil
1 lime, juiced
2 Tbsp apple cider vinegar
Salt and pepper
In a large bowl, add all of the ingredients.
Toss and add salt and pepper as needed.
